We've almost made it through the end of January and as promised, I've got a new muffin recipe for you. It's a protein-plus combo of banana and peanut butter, truly a flavor match made in heaven.
Peanut butter powder and Greek yogurt are naturally rich sources of protein. Together they create a tender muffin with 5 grams of protein each, about double the amount found in most homemade muffins.
The recipe is not "boosted" with any special protein powder beyond peanut butter powder, which I consider more of a "food" than a "supplement."
It has all the protein and fiber of regular peanut butter with far less fat. It’s easy to use in baking and smoothies because it’s not sticky, and it delivers an intensely nutty flavor.
Yes, it’s a processed food, but in this case, processing removes mostly calories and fat, not nutrition. If you've never tried it, check your grocery aisles for PB2, PBfit, and Naked PB or order it online if that's easier.

7 grams of sugar (about 3.5 grams are added sugars)
No refined sugar
6% of daily calcium per muffin
Not high in sodium (almost meets definition of low sodium)
7 grams of heart-healthy fats
A source of potassium, polyphenols, and antioxidants
Don't let the longish ingredient list keep you from making these muffins—they're easy and quick. The only extra step is mashing the bananas, which is a no brainer, when they are ripe and soft.
And yes—you can use a frozen banana in this recipe. Developing recipes that put that freezer fruit stash to good use is a personal goal of mine!
